My fondness for eggplant has blossomed oodles this year. Eggplant parmigiana, baked eggplant dip, curried eggplant...bring it on! Yet for some, it will never be more than a slimy garden egg. My boyfriend (and roommate) is one of these people, making it difficult to incorporate it in our meals. That's why I was thrilled to discover mini eggplant pizzas!
Mini Eggplant Pizzas
1/2 large eggplant
1/3 c tomato sauce
1/4 c grated Parmesan cheese
6-8 mozzarella balls
1 tbsp coconut oil
Handful of kale
Salt and pepper to taste
Basil (optional)
Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. Cut eggplant into rounds.
3. Arrange eggplant on baking sheet; lightly coat with coconut oil.
4. Bake eggplant rounds in preheated oven until hot, about 5 minutes. Flip and repeat.
5. Drop a dollop of tomato sauce into the center of each eggplant round. Top with a mozzarella ball, Parmesan cheese, and kale.
6. Bake until cheese is melted, about 5 minutes.
7. Season with salt, pepper, and basil to serve.
